A perfect blend of peanuts, coffee and cinnamon to enjoy with a cuppa! Ingredients: 100g brown sugar 100g butter or margarine 100g roasted, salted peanuts, chopped 2 tsp strong instant coffee 150g SR flour 1 tsp ground cinnamon Method: Preheat oven to 180 degrees C and prepare a baking tray. Cream butter and sugar until fluffy and then stir in the peanuts. Add the coffee. Sift in the flour and cinnamon and mix to a firm dough. Take a teaspoon size of dough and roll into a ball. Place on the baking tray and press lightly with a lightly dusted fork dipped in flour. Bake 15-20 minutes until a golden colour and then let cool for 5 minutes.
