Rice Noodle Salad with Peanut Sauce

Backyard Treats - Fig and ricotta toasties

This Asian-style salad and peanut sauce can be served either cool or warm.

Ingredients:
225g rice noodles (or Hokkien noodles)
1/2 to 1 cup shallots, chopped
1 cucumber, diced
1/2 cup peanut butter
1/3 cup rice vinegar
1/4 cup soy sauce
1/2 cup warm water
1/3 cup sesame oil
2 cloves garlic, minced
1/2 tsp all-spice powder
Hot sauce to taste
Dark green lettuce leaves
Toasted sesame seeds and tomato wedges for garnish

Method:
Cook noodles as per directions on packet (but undercook slightly). Drain. Rinse with cool water.

Combine noodles, shallots and cucumber in a large bowl.

In a separate bowl, whisk together peanut butter, vinegar, soy sauce, water, oil, garlic, spice powder and hot sauce.

Arrange lettuce on a plate. Spoon noodle mixture into the middle.Drizzle dressing over top.

Garnish with sesame seeds and tomato wedges.

Serves 6

Suggestion: Add cubed cooked chicken or turkey or serve hot, replacing the diced cucumber with cooked zucchini.
