Lemon Curd (Lemon Butter)
Ingredients:
4 eggs
¾ cup sugar
½ cup lemon juice
Knob of butter
Pastry cases
Method:
- Whisk eggs with sugar till well mixed. Add lemon juice and a knob of butter
- Cook in a double saucepan till thick (about 20 minutes)
- Pour into small pastry cases to make citrus tarts or pour into a bottle/jar for later on or use for gifts
