Fig & Ricotta Toasties
Ingredients
6 thick slices crusty bread (such as ciabatta)
150g (3/4 cup) fresh ricotta
6 slices prosciutto
3 fresh ripe figs, cut into quarters
2 tbs honey
Freshly ground black pepper
Lime wedges, to serve
Method
Toast the bread until light golden and crisp. Spread each slice with ricotta.
Top each slice with a slice of prosciutto and 2 fig quarters.
Divide toasties among serving plates. Drizzle with honey and season with pepper. Serve immediately with lime wedges, if desired
