A beautifully dark cake, extremely easy to throw together. Sure to be a favourite and perfect for birthdays and Valentine’s Day.
Ingredients:
1 ¾ cups (220g) plain flour
2 cups (500g) white sugar
¾ cup unsweetened cocoa powder
2 teaspoons bicarb soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup strong black coffee
1 cup (250ml) buttermilk
½ cup vegetable oil
1 teaspoon vanilla essence
Preparation method
Prep: 15 minutes Cook: 35 minutes
- Preheat oven to 180C. Grease and flour two 23cm round cake tins or one 20 x 30cm tin.
- In large bowl combine flour, sugar, cocoa, bicarb soda, baking powder and salt. Make a well in the centre.
- Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin. Pour into prepared pans.
- Bake for 30 to 40 minutes, or until toothpick inserted into centre of cake comes out clean. Cool for 10 minutes then remove from tins and finish cooling on a wire rack. Fill and ice as desired.
