Quick Chocolate and Coffee Cake

Backyard Treats - Boysenberry Pie

A beautifully dark cake, extremely easy to throw together. Sure to be a favourite and perfect for birthdays and Valentine’s Day.

Ingredients:
1 ¾ cups (220g) plain flour
2 cups (500g) white sugar
¾ cup unsweetened cocoa powder
2 teaspoons bicarb soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup strong black coffee
1 cup (250ml) buttermilk
½ cup vegetable oil
1 teaspoon vanilla essence

Preparation method
Prep: 15 minutes  Cook: 35 minutes

  1. Preheat oven to 180C. Grease and flour two 23cm round cake tins or one 20 x 30cm tin.
  2. In large bowl combine flour, sugar, cocoa, bicarb soda, baking powder and salt. Make a well in the centre.
  3. Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin. Pour into prepared pans.
  4. Bake for 30 to 40 minutes, or until toothpick inserted into centre of cake comes out clean. Cool for 10 minutes then remove from tins and finish cooling on a wire rack. Fill and ice as desired.
